Baked egg avocado

One of my favorite quick & easy (not to mention healthy & high in protein) breakfasts to make is baked egg avocado.
Turn your oven up to 425 and get out a small baking dish. For this yummy meal you start with one ripe avocado and cut it in half. Remove the seed and admire the perfect little cups for your next ingredient- an egg (or some egg whites). Place the avocado halves in the baking dish so they rest flesh side up. Crack the egg and split it between the two avocado halves. Carefully place the baking dish into the oven and let bake for 15-30 minutes depending on how well you like your egg yolk cooked. Remove from oven and top with your preferred accompaniments- I chopped up some baby heirloom tomatoes & tossed them with chopped fresh basil, a dash of olive oil, shredded manchego, truffle salt, & a pinch of pepper. Other options are goat cheese crumbles, diced onion, Rosemary, hot sauce, crumbled bacon, virtually anything you can think of that you like with egg and avocado. And that’s it!
