Irish potatoes

Did you know I’m part Irish? Yup. I know totally obvious right? Right. Needless to say, St. Patty’s day is a pretty big deal for my family (the non Asian side obvi) and we’ve been going all out since I was little- not to brag, but I’ve been in my fair share of St. Patrick’s Day parades 😉
Anyway, so usually I make Irish car bomb cupcakes which are definitely adult only and definitely delicious. This year, however, I was short on time and whiskey (I know, the horror!). My favorite quick and easy St. Patrick’s Day treats are Irish potatoes. Now don’t be fooled, these little things look like potatoes and sound like potatoes but are definitely not potatoes. Instead they are sweet little bites of coconut and cinnamon goodness.
Here’s what you’ll need:
- 1 brick of softened cream cheese (8oz)
- 1 stick of softened butter (8 tablespoons)
- 1.5 teaspoons of vanilla extract
- 4 cups of powered sugar
- 5 cups of sweetened shredded coconut
- Cinnamon
And that’s it!
So first cream the butter and cream cheese together with your mixer then add in the vanilla extract. Don’t over mix it just let it all get in there together.
Add the powdered sugar a half cup at a time (& try not to get sugar everywhere like I did). Next add the shredded coconut a cup at a time.
Lastly set out a little dish of cinnamon powder. Scoop some of the coconut mixture into your palms and roll it into a one inch ball then shape into a potato (or leave it as a little ball). Roll it in the powdered cinnamon and voila! You’ve got little Irish potato treats 😉
Keep these babies in the fridge until you’re ready to share (or not, hey no judgement here). Enjoyyyyyyy!
Ps. This makes a huge amount so cut the recipe in half if you’re not going to a big party (or you’re eating them alone because I really don’t want to be responsible for your diabetes).
